Anyway, the more I see of Celie the more I like her. I'd love to see more of her and her misadventures, whether it's together with Sarah or by herself.

Several things. I'll see if I can explain them;
First and foremost, her personality. While there's nothing wrong with Sarah, Celies snarky attitude makes her a little bit more interesting since there are so many possibilities for humorous scenes and equally humorous reactions, whether it's Celie reacting to something happening to someone else or to her. It also compliments Sarahs more cheerful personality, making them a nice comedic pair. I dunno, I guess I tend to gravitate towards "short fuse"-characters, or Deadpan Snarkers.
Secondly, her design. It may just be that I'm partial to liking bunny-characters in general, but I also like her color-scheme, not to mention her body language (from what I've seen from sketches like
these, especially when she gets mad and the likes). Her simple yet eye-catching design is also interesting, with her single bang in front of her eye, and such. It's the sort of character you really commit to memory.
Third, her backstory. Then again, I don't think you've ever said much about your toons "previous lives", but I do distinctly remember something about Celie liking onions because when her family ate out she always got the smallest portion, and no one else liked onions on their sandwich or whatever so she always took them... something like that. I get the feeling that Celie has the more interesting backstory, in that she's probably had to scratch and claw her way up to get to where she is, and it affected her personality thusly, becoming more jaded and cynical and sarcastic.
... maybe that's part of the reason she dislikes Sarah? Again, don't know much about Sarah, but she seems like she hasn't had a life full of many hardships, and Celie's being all like "And just what are you so cheerful about? Yeah, you got into the Toon-business nice and easy, I had to take the hard route! I earned my place here, runt!"
... or whatever, I should stop before I make up too much stuff about your characters that isn't true
Hopefully that explains why I like Celie. Hopefully it also makes some sense (it was one of those things that was kinda hard to describe, but I did the best I could).

Hey yeah! Without Celie, Sarah has no one to bounce off of. Also, since she's so matter-of-fact about things, it makes it better when Sarah inadvertently proves her wrong.
Heh, the hair and some of her personality are actually a little inspired by Iori Yagami, one of my favorite fighting game characters. He even likes Shakespeare!
You remember that story! Well, some things have changed, but yeah, Celie is supposed to have a much rougher time than Sarah, which is normal for world-weary types (seriously you gotta be Jesus or Vash the Stampede to not give in to cynicism after that). Celie doesn't like Sarah because she represents everything she doesn't like about herself; Celie's constantly being pressured to work only in cartoons, and is never happy with where she is. She doesn't like being made fun of, has pride, does whatever she thinks is best, and is afraid to make mistakes.
Sarah's totally okay with being considered a clown, accepting her role as a toon. She doesn't mind being the butt of the joke if it means making someone else happy. She's also a bit rambunctious and doesn't mind making a few mistakes. She believes her superiors are doing what they think is best, instead of questioning it.
Though, they're not total opposites, they have some similarities, such as their passion for their craft and sense of timing. But for the most part, you have it right. Celie sees Sarah as a runt; inexperienced and unrefined.

You said it much better than I did (which is only normal since their your characters).
Anyway, bottom line, I like both Sarah and Celie, but Celie ranks just a teeny tiny bit higher
