That doenn't look like CGI to me. The picture is rendered a lot better here than in the show. There is shading and texture. It is possible to achieve that effect without using CG.

Applejack is so beautiful (esp in this pic)... everything is perfect. The shading, the expression on her face... her butt. <3 Normally if you (a person) tried to make a pony's butt that big, it would not seem natural, but the curves really, well... fit in.
