Why not? Mtt isn't just a sexy looking robot. He's also a calculator. He actually spent all of his life underground as a calculator and it wasn't till frisk came through that he was able to use his 'human esque' appearance. I don't understand how everyone automatically assumes he would 100% be mtt EX forever after reaching the surface when he is obviously comfortable in his calculator form.
Alphys did fix the problem of the power output so that he can be mtt ex for longer times but she didn't say he had to be that way. He was still built to run as a rectangle. And I'm sure he would still do his show "cooking with a killer robot" as a rectangle.
Tl:dr he can be both. And being a star sometimes requires both.
