I've never understood this; If the ship is in orbit why are all the engines running?

The ship wasn't in orbit. It had just arrived and was delivering Lord Vader to the unfinished Death Star. Although, I don't understand why ALL the engines have to be running.

I know if anything the ships should be reversed and braking.
