The game over screen is similar to Cuphead. Run out of health or fail one of those quick time events and you will get knocked out, followed by being shown a picture of the boss ghost mocking you and a little progress bar that shows how far you got prior to getting a game over.

This is why you can’t get a game over. Otherwise you have to start from the last door you entered like in Luigi’s Mansion 3.
