They do have jaw bones. You’re not looking correctly

They only have either chin bones or jaw ends which arent actual jaw bones and i even typed jaw in and nothing exists on the model with that name so i have no idea

Well on cooler he has a jaw end but hes a special case seeing he has no actual head in his final form but all the other models have no head jaw
