Totally agreed. I believe it's because their outfits/looks must represent what the templars should look like according to Ubi, so yh they're classy, wealthy & baddass
Although some people didn't like AC Rogue, Shay is such a baddass character

You know, Templars really got some awesome sides. And Shay... gosh, I love his outfit. Templars really got the best fashion designers - black-and-red outfit that matches his black/red/silver Morrigan? Awesome. The appearance alone speaks: "Fashion. Formal. Badass. Fierce. Hardcore. Sharp. Calm. Cool. No-nonsense. On strict business. No joke. Get out of the way if you know what's good for you." Apart from Altair's Armor this is my topmost favourite outfit.

Nice. If i have to choose between Rogue & Unity cover to see which one is cooler. I would go with Rogue, Shay's walking pose look more badass
