Description This is a Raspberry Mousse cake I went through great pains to make for my Classical Baking service dinner. I designed the plate myself! The layers are as follows from the bottom up:

~chocolate chiffon cake
~chocolate spread (like ganache)
~fresh raspberries
~raspberry mousse
~raspberry gelรฉe

That looks mouth watering! I never really understood the whole mousse thing. It always looks so soft and fluffy. What does mousse taste like? Ice cream?

Hmm it's sort of hard to describe! It's like a very soft, creamy jell-o almost. And it tastes more rich than ice cream usually depending on the flavor mousse. But you won't know until you try it! Go forth on your moussey quest!

Oh gosh it is a very long process. You pretty much make every layer separately then assemble it and let it set! Then cut it into desired portions! It involves acetate sheets and sheet pan extenders . . . and a lot of patience.
