Simon appears to be a human living before The Mushroom War, which would make it impossible for Dr. Princess to be Betty. Am I the only one who thought that? They both appear to be humans, the background looks like a normal modern city, a plane flies past the window, and he mentions Scandinavia. The crown seems to have saved Ice King from the nuclear war and its fallout.

That is true, however, a lot of people were mutated and stuff after the Mushroom war, from what I've gathered. Doctor Princess obviously isn't human, so there is a possibility that she could be Betty, just mutated.
