Have always wanted to bake croissants at home, so when I saw them in the recipe book for this week's challenge I jumped at the chance. This one is from Woman's Day's "All Colour Book of Cakes, Pastries and Bread". It's breakfast time and I'm starving yet we have no ingredients to make anything with.

I've had the pleasure to make my own croissants. Basically the process is the same as making your own puff pastry. I looked at the recipe that you used and I noticed that you only did one fold and when you said nap time you didn't mention for how long. I usually allow it to rest for about 4 hours between folds and I do 3 folds. Nonetheless, these look very good.

I did 6 folds all up: I thought documenting each and every single one might get a bit redundant. All the detail follows in the recipe.
