I have just cleared Archer's and Gil's route and I am playing the CCC route now (may also known as the True ED of the game). I think the whole CCC is a fan service for both female and male fans lol Gil's attitude towards the player after Chapter 5 is just adorable (?) (although some also think that he is completely OCC lol) it's a lot more fun than the first one, there're so many scenes that made me almost died out of laughter, especially that scene you linked, that almost killed me. But I would recommend not playing Gil in the first play through as the creators recommended because he did create a lot of spoilers right at the beginning of the game.
As for the fifth hand, it would be BB's hand, the final boss of the game

I think I found out why Gilgamesh seems so out of character. Its kind of interesting.
Gilgamesh's personality is heavily influenced by the era into which he is summoned. The world, his property, of Fate/stay night was sullied by the consumption society of the early 2000s, so he was in a worse mood overall. He has taken a liking to the virtual world of 2032, so his personality is more stable and closer to how it was during life.

I have read that somewhere as well lol and makes so much more sense afterwards because although I wouldn't say he is completely out of character but he did seems a bit too lenient than I remembered.

oh yes it is. Personally, CCC route is my least favourite route if I have give all the EDs I have cleared so far a ranking 
it's not bad, it's just that I like the Servants' ED more.

I know it's the true ending and technically canonical, but I will easily and gladly take the Servant's route anytime.
I only went along the CCC route to truly and successfully say I truly saw everything the game had to offer... even if I didn't understand a word they said. :V

I did saw a fanfic on Pixiv that was about the male protagonist summoned BB as his servant. I haven't actually read it yet but I read through chapter 1-2 briefly and it looks quite interesting

I forgot to mention it's in Japanese||| (I thought I did but then I realized I didn't |||| sorry about that) Although I can understand a good enough amount of it, I am not a good translator...I don't think it is translated (not in anywhere that I know...) since the fandom is really small...but if you have basic knowledge of the language, google and google translator can help you get through the difficult verbs.
