Makes sense, but I think I was imagining something that looks like a dried out misshapen sponge or like if tripe had somehow become hardened or calcified.

That would make sense, kind of a honeycombed skeleton that cracks in unpredictable areas depending on the severity and number of chomps.

I try to avoid figuring out exactly what's going on to transform a round Pac into a wilted Pac, but I imagine it more like everything firm is just going lax rather than actual breaking/shattering of bones. I find the best policy is to not try to make too much sense of something that is clearly nonsense from the start!

We do see multiple Pac-skeletons in the show conforming exactly to the expected shape, but it's hard to figure out what is literal and what is cartoony.

That's where the artistic license comes in. I enjoy the full on wilt of "Southpaw Packy" but also like the shriveled raisin look Packy had on "Super Ghosts." Just so long as a noted effect is depicted.

Didn't "Once Upon A Chomp" have Packy and Pepper wilting when chomped in the script, but ended up just looking disheveled in the end product?

It does specify they "wither a bit, drained of their energy", which is open to interpretation. Since it also to be accompanied by "electronic deflating sound" it seems to be indicating they should have changed in appearance, even if not drastically.
If the animation followed the script I have, not only would there have been a Ghost rhyme right before the chomping, but it also wouldn't be happening offscreen. The shot is definitely on Packy and Pepper, and the Ghost Monsters race in and chomp them. So there was either a later draft of the script (seems likely since voices would have been recorded first), or the scene was interpreted differently by the animation team, or both.

I won't complain about the scene we got, because to have Packy and Pepper chomped is rare enough. But I do want to eventually draw it to match the script. But you know how lazy I am about long projects.
