Chocolate chunk peanut butter cookies with homemade whipped cream (i don;t like the canned stuff)The kids always prefer homemade cookies to shop bought biscuits after their morning cereal so thought i would make something different for them for a change.
Same recipe as the choc chip and cashew cookies but exchanged the chips and nuts for broken up chocolate bar chunks and added a couple tablespoons of peanut butter for a subtle taste, you could add 2-4 tablespoons if you like. Recipe in the photo below.

nope, i am limited to where i can photograph due to the lighting and background. I normally hold it with one hand and photograph with another but it was too heavy this time with the milk so got my other half to hold it up for me.

your welcome, be careful with whipping, once it starts to firm up it is ever so easy to over whip it and for it to go lumpy then turn to butter

ohh yes lesson learnt last time when I was whipping cream for a sponge cake (which failed haha) It's hard to identify when it peaks; is there any personal advice that helps you identify this stage?

keep turning off the mixer when it's starts thickening up and slowly lift out the mixer that's the best way to see the peaks as the cream will start to lift and peak with it, make sure you don't under whip though either else it wont hold it's shape so keep checking and turn the mixer to the slowest speed at that stage because within one minute it could over whip.
