Really cute hat! That's so funny that you shortened the pattern - it must look all dinky on your head! Glad to have inspired this, but then it doesn't look like I needed to tell you much about hat-making - you seem to have that covered, from the looks of your gallery!

Bunny ears - first make the ears and make sure you don't design them too narrow or you won't be able to turn them inside out. Make the hat without ears, then cut slits at the top and insert the ears, sew them in place across the slit you cut in the hat. It does need pretty good stitching across the ears to make sure they don't pull loose.
