I took the picture, then in a photo-editing program I selected only the petals and rose buds, copied it to the clipboard, de-selected the roses so the entire picture was then selected, lowered the saturation to 0 so it went black and white, darkened it a little bit, pasted the rosebuds and petals back onto the picture so it is the only thing that still remains in color, matched the roses I just pasted onto the picture (overtop the black and white ones), then turned the contrast and saturation up a tiny bit on just the petals to make them stand out more.

It sounds more complicated than it really is.
