I used Capture One to convert the RAW files with that effect (just levels, exposure, contrast, saturation adjustments) and Photoshop to put everything together.

I used Capture One to apply low saturation, high exposure, and high contrast to the original images. All in all not very difficult, but I think that presenting the set in this way makes for a much more interesting composition compared to the individual normal exposures.
