Since I'm making Umbreon plushies now, I decided to share the head pattern. I've only been seeing patterns where there's a seam down the middle of the face, and... those are fine and all, but not for my Umbreons because of the ring on its forehead and I didn't want a line down the middle of it. This pattern also puts the seams in more natural places, making it more closely resemble a cat's head.
If you want to learn to make a pattern for the body, I found this tutorial to be very helpful!
