In Which I Finally Open Photoshop and Make That Guide I Promised You:
I am using CS5. In this version, immediately to the left of the layer/channel/path window, there's a vertical column of icons. 2nd from the bottom, there is one that looks like [A|]. Click it, and a little window pops up with lots of options and numbers.
You can also make it pop up by looking up at the toolbar below the File menu, where you can change the font and stuff? When you have the text tool selected. Way to the right there's a picture of a little folder tab thing with bullets and lines. I *think* this is present in other versions of PS, the location might not be exactly the same but the picture always is.
You can figure out what most of the options are by looking at the little pictures and fiddling with them. The one that changes the spacing between lines is top right, and it has two A's stacked on top of each other. It is probably set to auto. It's measured in points, so if you're using 12pt font, 8pt line spacing will put lines closer together and 16 pt line spacing will make the lines farther apart.
