Rincewind seems like Chaotic Good or Neutral Good to me. Yes he's a tremendous coward and very cynical and pessimistic but every time he's also very capable of being selfless and incredibly compassionate - remember the climax of 'The Light Fantastic' and 'Sourcery'.

The Auditors of Reality from several of Death's books, Dios from Pyramids, and Vorbis from Small Gods need to be added to the LN/LE lists.
Despite their deep malice towards everything chaotic (like life) I'd still argue that they're more LN than LE- their nature as beings of pure Order gives them an alien mindset that doesn't fit neatly into mortal 'Good-Vs-Evil' morality.
Dios and Vorbis, being mortal humans, can be judged a bit more easily. Vorbis, like Lilly Weatherwax, is LE that thinks it's LG because he can't imagine himself as being evil/wrong, and thus sees everything that opposes him as evil. Oh- Lord de Worde, William's father! Same mindset, though he appears to use the words right or wrong rather than good and evil.
Dios is, IMO, less evil than the others I mentioned. He acts more or less without malice, but also completely without compassion. His only goal is to keep the culture of Djelibebi stable and make sure its rules and traditions continue, despite how unfair some of them may be. The fact that he's trapped in a time-loop, endlessly re-living the same 8,000 years of Djelibebian history over and over also makes me question how sane he is, and how much free will he actually has. True, he set up all the rules so that he would be in a position of high power, but once there does not further twist them to his own benefit, at least to the best of my recollection.
