Maybe it is because I work with custom picture styles on my camera? I do add a little contrast in post-processing but that's really not much.

I just seem to capture the strawberry at the bottom of the glass,
Obviously I'm just capturing it at the wrong time, I'm just wondering when I should, uh, click the button lol

What camera are you using? If you have a DSLR you can pretty much adapt your timing to the very moment the strawberry hits the water. If you are using a 'standard point and shoot'... well, don't have any experience about that but I think you should try to count in the auto focus-time of your camera as well. Logically, I recommend a DSLR for this kind of shots
