I like both of these images, but the white text stands out too much. If you make the signature a little less contrasty with the image, the openness/emptiness of the image won't be disturbed

That's a lot better now. As long as the text isn't pure white, it's usually OK. Just when you have a dark image, and a pure white signature (or the other way around), it can get distracting.
