Well if you really want to challenge yourself, try a beach scene.
I personally think that would be a bitch considering the lighting you'd have to deal with.
Blurring the background might help. Using accessories like an umbrella, etc, might help too.

I've only seen a few artists do it really well. Perhaps having the model dressed somewhat conservatively would help. Maybe a sun dress, or capri pants and a decent top.

Ooo, how about a model in the water of a lake with just her torso showing?
Water ripples around her, drops of water on her, wet hair?
I've never seen that done.

And while you're at it. Perhaps you could add a dame to Mt Rushmore. You know, since all of these things would be super easy to pull off.
