I'm a big fan of the split evolutionary lines.
Made this for Mayo because she wanted a chicken that wasn't Blaziken.

Are the male / female ones the same species or two different mons?

I think the way I've got it figured in my head is that they are two separate mons but still the same species. Similar to the Nidoran families in concept.

while I share your dissatisfaction with the lack of pure flying types, these guys are slated to be pure normal and pure dragon for that guy on the left
