and the creators did simply state squib's gender as "squib," so I guess there's a lot up to interpretation.

Personally, if squib and pumpkin's genders are more mental than physical, then I definitely see Pumpkin as a male and Squib as a female. Their personalities just ring true that way. Pumpkin feels like a sensitive, shy guy, and Squib feel like an aggressive, temperamental, but ultimately sweet and playful girl.
It kinda reminds me of Wall-E and Eve, to be honest. Especially since both pairs of lovers are mute.
