I had the Rom from atl4ntis with the stock kernel+cherry picks. Now i'm on CM10.1 (unofficial build) with cm kernel - and it's incredibly awesome
Imo no other kernel (franco, trinity...) can beat the stock/cm kernel on 4.2.1 for now.

I would just move the icons and arrange them as the more I like it, then I wanted to know how to change the icons, and finally, if you can create folders in the menu.

Very nice. As i mentioned the new Android 4.2.1 for me it's the smoothest and fastest Android so far. With the Galaxy Nexus it runs very smooth and it's very responsive. I love my Nexus

It depends on the ROM not on the device itself
When you install wodgetlocker you can select a different wallpaper. When you're into AOKP maybe there is this feature but i can't tell you about this - but i'm sure CM and AOKP will add this feature soon.
