an LMS Maroon, 8F Class, i've only really seen black ones before.

I've seen a black one as well @ NRM, York.

The reason they're usually black is because that's the 'Real' livery. Freight Black, either BR or LMS.
This example is in BR (Midland Region)Express Passenger Maroon only normally seen on 'Duchess' or 'Princess' class pacifics from the same designer as the 8F (Sir William Stanier F.R.S). Despite being 'wrong' for a freighter like the 8F,it's a nice enough livery

Mainly LMS. LMS was black, BR was Green until they turned Blue in the mid 70's-80's.
Any train can be repainted to a different livery either because it's been bought from another company or it's for an special occasion.

BR Wasn't ALL Green (Well, besides the Western Region. Becauses they're special )
There were three main colour patterns:
Passenger Green with Orange/Black lining. Originally, this was Passenger Blue (beautifully modelled by Tornado at the moment) however, sadly, the paint weathered badly so they reverted to Green.
Mixed Traffic Black with Red/White Lining
Freight Black(Solid Black)
Exceptions were the aforemention Midland Region pacifics in Maroon. Also of note were the Vale of Rheidol Railway tank engines- the only steam engines to recieve Corporate (1967->) Blue before they were sold into preservation/heritage working.
And in preservation/privatisation.. as you say, anything goes After initial forrays into 'individual identity' (see the Keighly Worth Valley Railway Ivatt 2 here:[link] ) most preservationists went back to what the loco would have worn 'in real life'. I say most. 48624 in passenger Marroon is a most honorable exception
