ubuntu 12.04 is a Long Term Support release. It means 5 years of developers support. Gnome shell is just another Desktop Environment. you can use Gnome shell or native Unity environment. It is up to you.
If you are new to linux I suggest to try Ubuntu remixes like Black Opal. It comes with all the tweaks and software pre-installed. OzUnityOS just released Black Opal which is based on ubuntu 12.04.
If your have 64bit processor I would recommend it for you. 32bit version will be released soon. Have a look here: [link]
