You can dye his clothes at a Tailor. Though each city gives you different colors. I forget where you get the black dye.

It's funny how the templars think that they can kill Ezio or Altair by ganging up on them. I hate when this happens in the game, but it's so satisfying to take them out one by one with sweet counter moves and combo kills.
