This model's a concept for the Fossil / Archaeology Mod by Flammarilva. You can view his thread here: [link]
Joining the Nautilus as a living fossil is the Coelacanth! As such, it can be found as DNA like the Nautilus can. To revive it, simply place the Coelacanth DNA in the Cultivate to receive the living specimen (Beware of Monster Outbreak!). Then with it in your inventory, place it in any body of water. Otherwise, wild variants can be found rarely in Ocean Biomes at deep depths.
Killing Coelacanths yield Raw Fish as the prize, an alternative to fishing. In addition, Plesiosaurs, Ichthyosaurs, and Mosasaurs will attack Coelacanths for sustenance. Coelacanths can be collected like Nautilus by right-clicking. One could attempt to eat the Coelacanth in this state, but would get a nasty case of food poisoning (similar to Rotten Flesh).

So are you using these wonderful models with Fossils and Archeology Revival? Also do you plan on making more models? (maybe like a Dunkleosteus or Liopleurodon?

I actually remember reading today that living coelacanths produce thick wax and oil that make them quite unpalatable. [link] I'm not sure whether or not that's why you have eating coelacanth leading to food poisoning, but I don't get the Raw Fish drop

Just a bit of a reference to that fact (Food Poisoning = Sickness from consumption), so you'd be right. The Raw Fish on the other hand is if you kill it instead of picking it up. If it dropped a Living Coelcanth instead, then it'd technically be 'immortal' as you'd be able to place it in the water again.

Another interesting prehistoric mob! I'm amazed with the amount of detail you put into this one, I can see exactly the number of fins that should be on a real Coca- Coeca- Coelcan- ARGH FORGET THE NAME! The colors are nice too, you didn't overdo the image noise as most people do, and the despite the low resolution, I can still clearly make out the features. Wow, you really have turned Minecraft mobs into an art form. It's like a low-res kind of 3D model. Kind of like how pixel art is low res 2D pictures!
