Well well well, Zigs, looks like you`re being without a lady. Literally.
And yes, this is how Freak`s soul form looks like - a swirling purple mist-like malign entity with the streaks of green on the sides of her skull-holes, mouth, belly and her malicious still-glowing white eyes. In this setting she had just literally lost her body in her duty to supply her new Master Teragon with fresh souls, but got her stuff way over her head when she tried to attack Castle Vandermore in order to kidnap some younglings. Now, her body being utterly reduced to dust, which is the feat not even Victor was able to do upon her before she went full berserk on him and with her body being at its breaking point, her soul was set free in order to hide in the closest darkness before the night-time and to find either a new corpse to inhabit or a sleeping living being, preferably a dragon, to whom she would kidnap their soul and body from.
And lucky for her, in the cave near Teragon`s cave ... was this Red Dragoness. Of course being brainless in her nature, she first tried to maul her, but as a soul she was unable to bite and scratch properly, thus she had to go the hard way and repeat the same process she did with Victor - getting Ruby`s head aside and then fully twist it, so that her neck breaks and blood shows from her mouth and the nose.

Yes, Freak has trouble snapping necks because of both her reduced state of mind (as well as her usual body, which is not suitable for full neck snaps, especially when her hands are being bony) and because of her own belief that this is "cheating" because it`s rather painless and she more enjoys her victims scream with pain as she disembowels them, vomit down their throats, into their eyes, almost anywhere where there would be maximum pain. But if her Master says to bring their victims unmolested, then she will do it, mainly because she payed dearly for killing Victor, his son and minion.
How?
That is left in the darkness of speculation just like unbeknowst to her, she`s killing his 2nd child there in order to get herself both her soul for her Master and a body
