Only once and a long time ago I met people from Texas in real life.
That was the drilling crew on a research vessel in the southwest Pacific where I did some research.
Those true rednecks told me that rattlesnake was essential for a good chili con carne.
But maybe they were just tesing on the young foreigner

Oh my, they were certainly tugging your leg! Rattlesnake is eaten here, but it takes a LOT of them to make a meal and they're very bony, like a fish. Plus they're the wrong meat for a chili con carne, being much too bland; that's better reserved for a hearty meat like beef or buffalo, or maybe pork. I'm sorry they pulled the wool over your eyes, dear!Β
(If it's any consolation, I had a friend from Paderborn who many years ago had me convinced that you all still use outhouses, so it works both ways... )

I've seen those kinds of vessels on the Gulf Coast before, too. I think they're sued to sample cores near drilling sites. The Gulf of Mexico is thick with offshore drilling platforms (thankfully, most of them don't fail spectacularly like Deepwater Horizon did!) so these boats are as common as tugs and tows!
I figured you'd get a good laugh about the outhouse thing. He had a great sense of humor but I'm sure I pushed it to the limits with my ignorance for a while. We can be so Ameri-centric at times, it's scary. I've worked on breaking that habit in the years since then.

It is indeed a former vessel involved in oil exploration which was chartered from BP by the JOIDES group. And - just checking - it is still in service, now with a blue hull joidesresolution.org
Home of the JOIDES is Texas A&M University in College Station. Never made it to the capital of aggiedom myself, though
