Basically because Sasuke killed him and thats what he wanted since he felt so guilty about his mission to kill his clan. That's just what I think. This picture was meant to be the moment BEFORE Sasuke decided to go crush Konoha, which is the opposite of what Itachi wanted. Hope that helps. I do agree with you, though. Itachi literally gave him EVERYTHING and Sasuke just blew it off.
