You know, about the Pikachu, there was a DLC for Blaster Master Zero (a Reboot of the original, simply named "Blaster Master") that lets you play as the respective character.
In short, that one's more mobile, and have better defenses (in the form of using "MP" to negate damage, or a healing ability) than Jason, (default/Non-DLC character) but at the cost of Arsenal/number of weapons, and Firepower.

Iota - Gallade (Closest by silouette, also fast)
Daytona/Viper - Darmanitan (Both are blazing furious)
Carrera - Magnezone (Magnetic powers)
Elise - Arbok (Arbok is the only cobra-type among snake-like Pokemon, and Elise is like a cobra, too)
Stratos - Beedrill (Buzzing and ready to obliterate)
Panthera/Zonda - Zoroark (Ability to create illusions. It'll require one unique Zoroark to show all that power of LOVE...)
Shiden/Nova - Mewtwo (Godlike psychic powers)
Asimov - Raichu (Kinda spoilers, but hey ._.)
Teseo - Porygon Z (Most glitchy among virtual)
Nimurodo/Milas - Gyarados (Mighty and watery)
Gibril - Mawile (Cute and sharp to the metal point)
Nike/Desna - Sylveon (Jokes about Sylveon's flesh ribbons... Crap, it's hard ._.)
Asroc - Lampent (Ability to possess, also fire-relevant)
Ghauri - Carbink (Sparkly crystals)
Tenjian - Alola Ninetales (Unimaginable icy powers, connection to fairies)

Iota: linoone, cause can learn extreme speed and the light i can see it like a normal type
Daytona: A ponyta for the fire and the horse
Carrera a magneton, same reasons, but remember he can separate
Elise: frosslass cause the ghost powers and is a femine figure
strator: a ledian, i don't know why
Zonda: Totally agreed
Nova: Mew (This is more like a god)
Ampharos: (Mega-evolution hair, thats why)

milas: Croconaw (I can see select a fish but... I don't know anyone how can represent milas)

Desna: I was thinking more like servine, Principally because the vines can act like the same way
