And I believe Integrity was Spanish?
Most people I have seen show most of the fallen humans as all being Caucasians, with at least one African American.
You are the first one I have seen to try all of them having different nationalities.

I actually looked at their item to get inspiration to their origin
Integrity is Spanish or Italy origin, because I figured out Ballet originated from Italy but I honest best liked the Spanish ballet design
Perseverance is Muslim because I find that some of the first books came from the Middle East.
Bravery is either Greek or Turkish because it was pretty normal to see men with bandannas around their heads and wearing gloves when riding horses
Justice is old Western American because of his stenotypical cowboy hat and gun
Kindness and Patience are more random. I chose Patience to be north European because I am that myself, and Kindness have either Greenlandic or African origin.

Really, it is fair to show that there are other people in the world (personally, I think of Frisk being Asian-British, since I think Mt. Ebott is in Britain)

I honestly not fully sure where Mt. Ebott can be located. but like you; I am almost certain it lay in the Europe area, because of most of the monster wear medieval armor and they are based on European mythical creatures and Frisk name is a Danish word.
even Chara's name are old English if I am not mistaken
although Mt. Ebott are also possible located on a died out volcano because of Hotland area
