I think I now see where my problem is, when it comes to painting manes and tails. I do the random strands. I guess I just need practice

Ah, yeah I started like that too. My first manips are sad to look at. After a while you just get better. But make sure that you NEVER just keep something the way it is "just because" you don't want to work on it anymore or don't know how. In order to improve you need to learn how to do everything and not keep putting something off or avoiding it.
I used to avoid splashes and fantasy scenes, and even now I tend to avoid complicated manips because I'm too lazy and don't know how to execute them properly. I definitely need to work on my weaknesses to improve though. C:
