I honestly think Zote is too pathetic to crush but besides that, I'm not sure if The Knight really cares about him like that. Zote is just another bug who isn't actively trying to murder them so that's a good enough bases for friendship as any lol. Bretta on the other hand, Gods I love her so much, she's so fucking adorable. I hope we get to see her in Silksong. As sad as I am that she thinks Ghost is a bad guy I hope she's able to go on her love quest and find her prince ((or princess))
That said if someone were to mod Hollow Knight to allow you to cuddle in bed with her when she's like 'please lay with me' I wouldn't be upset ^///^
