It takes some practice, s'all. And it isn't just about converting a colour photo to mono - it either works in mono or it doesn't, and sometimes this is better decided at the time of shooting. One thing that can help is to set your JPGs to B&W in-camera so that as you shoot and review your shots will be in mono already. Eventually you'll grok it

Oh yeah, sorry, in my head everyone shoots RAW+JPG - RAW will be normal, but the JPGs have whatever creative style you've applied.

I had started out shooting RAW-only, but being able to set some baseline adjustments to the JPGs (mono or colour) meant I saved myself a bunch of busywork processing snapshots and such that didn't need a full workup
