Hmmm well i guess in my opinion the plot would change a bit with Frisk's size making some tasks being a bit more difficult to manage at such a size. Monsters would need to be more careful around Frisk and it wo9uld take Frisk much longer to get through her journey through the Underground with all the obstacles she would face possibly.
