And I always thought, that everything in Blender starts with a cube.

Actually, I start with the eye sockets. You deform the circles into the shape of the eyes from front and side view and just extrude out the face from there. I basically use the same techniques taught here: www.youtube.com/playlist?list=…

Okay, I see. Sounds kind of strange to start with the eyes, but then again I did that for a long time as well when drawing faces.
