um... I'm sorry I can't understand what you said 'draw hair' thing (T▽T)? is it painting skills? my first language is not English so sometimes it takes hard to know.

oh! I use to painting Sai-tool and it has option to shade like that double color.  this work has just 3 layers line/base color/shade(saitool option use)! Is it right answer to your question? I hope so.

sort of. i mean, how do you know WHERE to shade to make each hair strand look real, and not just one big lump of hair?

um, Practice only. see and draw lots of things? like picture , painting , animation and illustration, ect ect. I'm still practice everyday!
