I dont know if one is able to change the icons with touchwiz, but it should work the same way like with a Milestone.

I would recommend using a launcher different from Touch Wiz. You should notice a speed increase as well if you jump to something like Launcher Pro (plus version enables custom dock/icons) and Go Launcher.
