You know i actually wondered the same thing. Pixar has so much to work with here,a whole alternate universe of civilised monsters that hasnt barely been touched upon and portal closets that leads to any location on earth,thats practically infinite possibilites right there. Hell even if they didnt want to go into all that just short episodes of these two interacting when he secretly visits her would have been popular becuase they are adorable.
I think the only Pixar film they gave a show to was Cars which is a shame.

Thank you! Expressions are by far my favourite thing to draw on characters. I used to have trouble drawing them as well. What i personally did to improve on expressions was i gavered up tons of references from disney,don bluth,and other inspiring Animation studios,copy pasted them together as a big collage and studied the hell out of them by copying them all in my sketch book.It worked wonders becuase you eventually memorize these expressions and it comes to you naturally when drawing.
