So can anyone in the know explain to me what this whole design/cute fluffy thing selling/adoption thing is about? Is it just about collecting them like trading cards from artists you like? Do people use the ones they get for different things? Is there some kind of community or subculture thing based around this? Question mark?

Adoptables are basically character designs that people "sell". Once somebody sends the points or money for the design they want, they can use that character and claim it as their own. It's basically like purchasing a character—people can then commission people to draw their "adopted" character, put that character in drawings of their own, etc.! Hope I could help

I guess that makes sense, but I don't really understand what people use them for. I did buy a character from a friend of mine, but mostly because it was one of her designs, and also a gryphon. Unfortunately I haven't actually found a use for it yet. o-o;
