This is Kenichi-Shinigami's Flutterhulk design, not mine! kenichi-shinigami.deviantart.c... Check his gallery, BTW, it's great!
I initially planned to color her in an all-green scheme, but then I took into account that the Hulk's hair is always black when he transforms, so I guess it's just his natural hair color becoming darker after he transforms (since his "human" hair color is normally brunette or brown.) Fluttershy's mane is light pink, so it would probably become red after she transformed, hence why I chose Kenichi-Shinigami's design.
By the way, if you're wondering why I chose Fluttershy for the Hulk, these are the reasons:
