Of course, the obvious alternative would have been "What if Sunset Shimmer had stepped through the portal, and turned into a dog like Spike did."

It would be pretty funny if the portal turned everyone into dogs the second time they went through.

Yeah, just imagine Sunset Shimmer entering the human world with grand plans of seeking power and conquering Equestria... and then she turns into a dog. 
I mean, okay, she canonically was a b!tch before she got reformed, so ..... 
But... it would actually make for an interesting fanfic, I guess she'd be humbled, or something. Either that, or she'd try going full-out "Pinkie and the Brain" on the human world. Although without magic, that'd be tough.

What if she settled down and learnt perspective away from the life of being a student? No magic, no expectations, just relaxed days and ear scritches.

I can see that as a slice of life kinda fic, sure ---
I've actually read a cute fic where the Dazzlings turn back into tiny seaponies, and the humane7 adopt them as pets and feed them and play with them. 
But there's always that one part in my brain that's unsettled by the idea of a person being reduced to a pet, no matter how cute... 
If Sunset fully embraced the life of a dog and/or rabbit, I just... I dunno, I'd expect someone back in Equestria who cares about her being horrified learning of this, like she's thrown away all her opportunities, her interlect, her talent. 
What would somepony say to someone who just ignored their special talent to do mundane things instead?
If Twilight Sparkle resigned from Princesshood, closed her library, and went to work as a waitress in a burger restaurant, that'd just be wrong.

Haha, I was meaning it in more of a zen way, given that pony life drove Sunset to villainy (and life with humans didn't get her to drop that at all). Her dropping out of magical training to pretend to be a high school girl kind of fits the bill anyway, no?
At least we have Applejack, who's able to live the relaxed life AND take breaks to fight monsters/etc.

Well, it'd be fine if she could chill as an animal in one world then come back to her "regular life" and switch back and forth whenever she needed to de-stress.
But, remember: Before Twilight rigged the Mirror, it only allowed passage every "30 moons", which may or may not mean as long as 30 moon-phases, aka ~30 months.
"I was a dog for two and a half years, Twilight. Two and a half YEARS!"

I would not survive.
