He is Thomas. Regeneration changes his body and personality (except for core aspects). It's why his taste in clothing changed.

Yup, he still remembers that stuff. He views his previous incarnation as... a different version of himself. Like how people talk about their teenaged selves, or child selves, or drunk selves (heh).

Course. Thomas 1 had anger issues towards anything demonic, or aberration-related and could be quite savage in combat, but to the extent that he'd stop thinking straight. Thomas 2 has overcome a lot of that, but is still bitter about demons or aberrations, and is much more reckless.
