I suppose my versions a little different.
I imagied that once Eyeless-Jack was  a medical student with a fascination in the human body and the aspect of breaching new medical boundaries.
Unfortunately he was also a sociopath, who experimented on animals to test his theories, before he began craving a 'bigger' target.
After a faux date with his classmate, Kelly, he attacked her in the woods and proceeded to dissect her and place her organs in jars for 'cataloguing'.
Unfortunately for him, some otherworldly interference occurred to rescue the girl, and began to morph his mind and body as punishment.

He became enslaved, and began to do the dirty work for his 'boss', whilst delusional that Kelly was his 'wife' and he was working as a brilliant surgeon, breaking the boundaries of medical science, when all he was doing was simply stealing organs and body parts. For sustenance, he would occasionally eat the more healthier organs, and kept the more unhealthy and deformed ones for his collection to 'study'.
