I'm not always about realism. It depends (though, I tend to go for realism as a default because it's easier to go in later and stylize. For me, anyway. )

There are wonderful books out there, and also great art and animation. You can get ideas just by watching well-designed cartoons you really admire. I'll use The Incredibles as an example- look through their concept art, from beginning to the final stages. Pixar couldn't yet do realistic humans, and so they had to find the balance between realism and a stylized physiology. The characters are not realistic, but they are grounded in realism. Tony Fucile is a great artist to study for this; he did the character design for the Incredibles, Iron Giant, Inside Out, Ratatouille... I love his stuff, and it's a good way to learn the balance between realism and stylization.

You could also look at the work of Bruce Timm, who designed the look of the DC comics cartoons in the 90s.
