"Now?" As I remember it, Hermione always needed to shout out the names of spells. And it actually doesn't matter, because Zatanna can just say "Retnuoc taht lleps!" or "Tcelfed!", or something to that effect.
Zatanna stomps. Her ability to do almost anything she wants merely by saying it backwards puts her well above the level of any given HP character you could name. I'd honestly be prepared to argue that Zatanna could solo Voldemort's entire army, especially if it's Morals Off.

I honestly don't recall. But again, it's a moot point. Zatanna is just on a much higher level of power.

Hermione's never going to go for the killing curse because 1) That's out of character, and 2) Even granting that this is a Death Battle, she does not know how to use a killing curse because she never showed the ability to use it.
This is still a mismatch in Zatanna's favor.

She's Hermione, never underestimate what she probably knows. Plus, there was that one time all the Turtles killed each other in a battle royale, nothing is out of character here.

I really do hate the "don't underestimate them" card. I could just as easily turn that on it's head and tell you not to overestimate her, which you're doing right now. Or alternatively, I could say "don't underestimate Zatanna". Zatanna stomps because she's more powerful and has better feats. No different than pitting Darth Sidious against Dumbledore, or pitting Galactus against the TMNT, or Zeus against Batman and Robin. A mismatch is a mismatch.
Also, knowledge actually doesn't mean much if you can't apply it to a fight, and in any event, Zatanna's an accomplished sorceress who's been doing what she's been doing for years. The idea that Hermione has some sort of edge in knowledge is silly.

Sidious. In general, Star Wars characters stomp Harry Potter characters, especially Legends versions, who are much better in speed, strength, and frankly power too more often than not. I seem to remember actually listing Sidious' feats in the Sidious Vs. Ozai fight. Well, Dumbledore wouldn't stand any better of a chance.
