I know whenever I play through gen 1, I always have a Farfetch'd on my team as an HM slave.It's nice that Farfetch'd has a new evolution now. Hopefully it's good.

I feel as though it’s gonna have a pretty high attack and defense stats, but probably have super low speed.

Looking at the leaks, yeah, you're mostly on point. High attack, okay defenses and slow speed.
It's moveset is also very delicious, retaining moves like First Impression, Leaf Blade and Brave Bird!
